A bain-marie a water bath or double boiler is a piece of equipment to gradually heat materials to a desired temperature or to keep a material warm.  The metal outside the container heats liquid (water, oils, etc.) to melt the material within the metal container without burning,  The modern bain-marie is electric using hot water (bath) vapor or steam.
